VANILLA SUGAR COOKIES

 
 
3/4 cup (1 1/2 sticks) butter  softened
1 cup sugar
1 egg
1 tsp. vanilla extract
1/8 tsp. salt
2 cups all purpose flour
Preheat the oven to 350F.  In a large bowl, beat together the butter and sugar with an electric mixer.  Add the egg, vanilla, and salt;  beat until smooth.  Stir in the flour and knead lightly until a soft dough forms.  Divide the dough in half, then wrap each half in waxed paper to form a cylinder about 1 1/2 inches in diameter.  Refrigerate the dough until firm, about 2 hours.  Cut the dough into 1/4 inch slices and arrange on greased cookie sheets.  Bake for 12-15 minutes.
